"The best kitchen in Hitchin"

The Brief:

 

When Ben Hedley & Tom Weller approached us regarding an adventurous new project in Hitchin, we were keen to be involved.

 
Having worked with the boys at their first site – Groundworks, we knew and understood their aspirations and desire to be the very best.

 
An initial meeting outlined the need for a brand-new Kitchen capable of serving 80+ covers, our task was to design and implement a concept that would fulfill that requirement.

 

 

What We Did:

 

From initial conceptual drawings we agreed on a design that both parties were happy with, the task was made interesting as part of the proposed kitchen was in fact the courtyard!

 
The plan was to build a roof over this area as it was to be the location of the new cook run and importantly a state of the art ventilation system.

 
The building works took place over a two-week period and by February we had a watertight room and the New Kitchen was taking shape.

The next task was to install the 4.5metre Extraction Canopy that was to include CO2 monitors and spark arrest filters specifically for the Charcoal Oven.

Having run in new electrical and gas supplies we set about cladding the walls in Stainless Steel and Hygienic PVC. Once complete, safety flooring was laid, and we were ready to install the equipment, the main feature being a Fogarty Charcoal Oven.

 
Over the next 5 days the kitchen was installed and we had 3 distinct areas – wash, prep and cook – Chef Matty Long was over the moon and commented ‘This is the best kitchen I have worked in’
 

 

The team @ Colin Hill played a key role in our refurbishment of Kite at The Red Hart. Additional support was given in a variety of different areas which ensured a seamless installation. The team went above and beyond, and I wouldn't hesitate to recommend their services.
